Aloo Tahari – Mummy’s Magic Wali Ghar Ki Khushboo

Intro:


Baarish ho ya thoda thakawat bhara din, ek plate garma garam Aloo Tahari bana deti hai sab kuch theek. Is simple rice dish mein hai masalon ka tadka, aloo ka softness, aur mummy ke haathon ki yaadon ki khushboo.

Ingredients: (2-3 servings)


Basmati ya normal chawal – 1 cup (30 mins bhigo ke)


Aloo – 2 medium (chhote tukdo mein kaate)


Pyaaz – 1 bada (bareek kata)


Tamatar – 1 (bareek kata)


Adrak lehsun ka paste – 1 tsp


Hari mirch – 1 (optional)


Haldi – ½ tsp


Lal mirch – ½ tsp


Dhania powder – 1 tsp


Garam masala – ½ tsp


Zeera – ½ tsp


Tej patta – 1


Namak – swad anusar


Tel – 2 tbsp


Hara dhania – garnish ke liye


Paani – 2 cups approx.

Method:


1. Cooker ya patile mein tel garam karo. Zeera aur tej patta daal ke thoda bhuno.



2. Ab pyaaz daalo, golden hone tak bhuno.



3. Ab daalo adrak-lehsun paste, hari mirch, phir tamatar. Masale soft hone tak bhuno.



4. Sab dry masale daalo: haldi, lal mirch, dhania powder, garam masala.



5. Ab aloo daal ke 3–4 min bhuno, taki masale chipak jaayein.



6. Bhige hue chawal daalo, achhe se mix karo.



7. 2 cup paani aur namak daal ke dhak do. Medium flame pe 10–12 min ya pressure cooker mein 2 seeti.



8. Dhakkan khol ke halka sa steam nikal jaaye to hara dhania daal ke serve karo.
